Gluten Free Banana Pancakes

A great snack for anyone, anytime.

Azzah Fariha Samad is a woman who wears many hats. While most people would know her as a Suria actress or the wife of local R&B musician Alif Abdullah, the mother-of-one is also a social media star (with close to 80,000 followers on Instagram) and was previously an educator at a local education institution.

As a busy mum who is constantly on the move, Azzah arms herself with quick and easy recipes of food to feed her 11-month-old daughter Alana. These healthy, gluten-free banana pancakes for instance, rank highly among little Alana’s favourite snacks.

“Whenever we’re eating as a family, I can see Alana looking intently at the food that the grown-ups are eating, even when she has her own food. Perhaps it’s because the things that we are eating look more delicious to her,” shares Azzah.

“Alana’s also at the stage where she is moving on from soft foods, and looking to eat things that have more bite to them. This prompted me to go online in search of healthy homemade recipes that would be suitable for her, which is how I stumbled upon this recipe for banana pancakes.”

These banana pancakes make for a great snack option, particularly if your little one is on a gluten-free diet as the recipe does not contain any flour. It also does not contain any salt or refined sugar, with the sweetness coming naturally from fruits.

A useful tip: fruits are a wonderful alternative to sugar when you want to add sweetness to a dish. Azzah’s recipe uses blueberries and bananas. The former is a superfood that is full of antioxidants and helps to keep growing bones strong while the latter contains nutrients such as potassium, calcium, iron and vitamin B6 that are essential to keeping little bodies healthy.

Concludes Azzah: “I particularly like that I can make these pancakes in small manageable bits that are easy for Alana to hold and eat on her own. She loves them as the pancakes are naturally sweet, thanks to the bananas and blueberries. Plus, the house smells really delicious when I’m making them!”

 

Gluten-Free Banana Pancakes

Gluten-Free Banana Pancakes
(9 months onwards)

Ingredients:

  • 1 Banana
  • 1 Egg
  • Steamed blueberries

Methods:

  1. Cut the banana up into slices and mash.
  2. Add the egg to the mashed banana and mix well.
  3. Blend or mash blueberries into the mixture.
  4. Once done, pour the mixture into a bottle for easy squeezing.
  5. Add some butter to a pan. Using the bottle, squeeze the mixture out in a circle. Brown on both sides and serve hot.
  6. Your gluten-free banana pancakes are now ready to eat!
